Policarpo Yossa, Colombia - Filter

The giant coffee bean giving off massive flavour. 

The Maragogype variety is a monsterous bean, full of volume and potential. Roasting this guy is usually a nightmare as there is so much space to get heat into to roast, but this lot from Policarpo accepted our roasters offering with poise and grace. The resulting cup profile is filled with sweet, round red apples, while the soft taste of fig slides in later. All of this is easy to taste with the mouth full of honey.
